How can i use a waterline model ship look like it's sinking?

It all depends what you're trying to do. Many ships through history have been sunk without the hull below waterline show.

Some example that comes to mind are: USS Arizona, Retvizan - a Russian pre-dreadnought attacked at Port Arthur, and the German navy that scuttled at Scapa Flow in 1919.

So to sum up, you can build a realistic sunken ship from a waterline model. "Believability" is in the eye of the beholder.
